Hawaiian Pork Chop Skillet
This quick and delicious one-pan dinner is perfect for those busy days.
2 Tsp. vegetable oil
4 pork chops (bone in works best)
1 Ontario greenhouse red pepper, cut in chunks
1 Ontario greenhouse yellow pepper, cut in chunks
1 can pineapple chunks with the juice
1/2 cup chicken broth
1 Ontario greenhouse tomato, chopped
2 cloves garlic, crushed
Salt and pepper to taste
2 cups uncooked minute rice
Brown pork chops in oil over medium high heat. Add red and yellow peppers, pineapple (with juice), chicken broth, tomatoes and seasonings. Mix well and bring to a boil. Stir in the uncooked rice. Cover and simmer on low for approximately 5 minutes. Let stand for 5-10 minutes before serving.
