Veggie Stuffed Chicken Breasts

So delicious it will become your family favourite immediately.

4    Boneless chicken breasts, cut in half crosswise pounded thin.
4    Slices of cooked (deli) ham, cut in half diagonally
8    Slices Swiss cheese
1    Cup green onions, chopped
1    Cup mushrooms, sliced thinly
1    Cup zucchini, chopped
1    Cup Ontario greenhouse red peppers, chopped
      Salt and pepper
      Dijon mustard
    
Preheat grill to medium high heat.

In a bowl, mix together green onions, mushrooms, zucchini and red peppers. Sprinkle with salt and pepper to taste.

Spread a little Dijon mustard on the chicken breasts. Place 1 slice of ham, 1 slice of cheese, and some of vegetable mixture on each breast. Fold chicken over filling and secure with a toothpick.

Grill for 10-15 minutes until chicken is cooked.
