Scrambled Eggs Ranchero

Try something new for a unique Sunday brunch or a light supper.
2 Eggs
1 Tbsp plain yogurt
2 Breakfast sausages, chopped
1 Tsp olive oil
1 Ontario greenhouse tomato, diced
2 Green onions, chopped
1 Tsp cilantro
½ Tsp ground cumin
In a bowl, whisk together the eggs, yogurt, and salt and pepperto taste. Set aside.
In a skillet over medium heat, brown the sausage. Add tomato and green onion and stir. Add in spices. Saute for about 1 minute.
Add egg mixture and stir until scrambled.
