Souvlaki
A perfect summertime meal that can be made year-round.
4 Skewers, soaked in water
1 Lb pork, cut into cubes
4 Pita breads
1 Ontario greenhouse tomato, sliced
½ Ontario greenhouse cucumber, grated
1 Onion, sliced
Shredded lettuce
Tzatziki sauce
Any and all of your favourite seasonings
Divide the pork into 4 equal portions. Slide on skewers. Season with your favourite spices and herbs. Grill on medium high heat 5-8 minutes.
Warm the pita breads on the grill for approximately 30 seconds per side.
Spread sauce on the warmed pita bread. Place one skewer on sauce, and then layer with the vegetables. Roll up or fold over, and enjoy.
