Mussels Italian Style
This is so easy and delicious. Take a "trip to Italy" and enjoy.
3 Ontario greenhouse tomatoes, chopped
1 Cup white wine
1 Cup tomato juice
2 Cloves garlic, chopped
2 Lbs fresh mussels
¾ Cup cream
½ Tsp crushed red pepper
¼ Tsp oregano
1 Tbsp fresh parsley, chopped
Salt and pepper to taste
Your favourite pasta, cooked and drained
To a large pot, add wine, tomato juice, garlic and mussels. Cover and cook on high heat until shells open. Remove the mussels from the pan and set aside.
Strain the liquid from the pot, and return strained liquid to pot. Add tomatoes, crushed peppers, oregano and salt and pepper to taste. Bring to a boil and reduce to half. Add mussels back into pot and add cream. Simmer for 2-3 minutes. Serve over pasta and garnish with the parsley.
