Shrimp Scampi With Tomato Wine Sauce

Easy, elegant and delicious. A perfect recipe for one of those "special" occasions.

30     Shrimp scampi, shelled and deveined
2       Tbsp olive oil
3       Green onions, chopped (or shallots)
2       Cloves garlic, chopped
½      Cup white wine
5       Ontario greenhouse tomatoes, seeded and chopped
½      Tsp dried thyme
        Salt and pepper to taste
   
Heat oil in pan on high heat and brown shrimp for 1-2 minutes. Remove from pan and set aside.

Add green onions and garlic to pan, reduce heat to medium and sauté for 1 minute. Add wine and simmer for another minute. Add the remaining ingredients.  Simmer for 5 minutes. Return shrimp to the pan and mix well. Simmer for 2 minutes or until shrimp are heated.
