Greenhouse Pepper Jam

Yes, made with beautiful Ontario greenhouse peppers! It's a must-try recipe.

4          Ontario greenhouse peppers, seeded and chopped
½         Jalapeno pepper, seeded and chopped
½         Red onion, chopped
3          Tbsp olive oil
1-1/2    Cups red wine
½         Cup balsamic vinegar
½         Cup maple syrup
¼         Cup cranberry juice
1          Tsp juniper berries
1          Tsp coriander seed
4          Black peppercorns
1          Bay leaf
            Pinch thyme
   
Place juniper berries, coriander, peppercorns, bay leaf and thyme in cheese cloth and tie up. If you don’t have any cheese cloth, a coffee filter works well.

Saute vegetables in oil over medium heat. Add wine, vinegar and maple syrup. Add cranberry juice. Mix well and add the spice bag. Reduce heat and simmer until liquid becomes thickened (like syrup). Remove the spice bag and allow to cool.
