Tomato, Chicken Pasta

A quick and tasty dish that your family will eat up!

8     Oz. pasta
3     Tbsp olive oil
1     Lb chicken breast, boneless, skinless and cut in strips
2     Cloves garlic, chopped
½    Cup chicken broth
½    tsp thyme
½    tsp oregano
2     Ontario greenhouse tomatoes, chopped
4     Green onions, sliced
¼    Cup black olives, sliced
¼    Cup grated parmesan cheese
       Salt and pepper to taste
   
Cook the pasta as per directions. Drain and return to pot.

Heat oil in a large skillet, and sauté chicken and garlic until browned. Add chicken broth, thyme, oregano and salt and pepper. Simmer for 5 minutes. Stir in tomatoes, onions and olives. Simmer another 3 minutes.

Add chicken mixture to drained pasta. Add parmesan cheese. Toss well and serve.
