Corny Condiment

A perfect accompaniment for grilled chicken that's good for you too.
1 Ontario greenhouse red pepper, chopped
2 Tbsp butter
1 Onion, chopped
4 Cups corn
2 Green onions, chopped
½ Tsp sage
½ Cup cream
Salt and pepper to taste
Heat butter in a large skillet over medium high heat. Add onion. Cook for 2-3 minutes until softened. Add corn and red pepper, and cook (stirring frequently) for 8 minutes. Stir in green onions, sage, cream, salt and pepper. Cook until heated through. Serve warm.
