Burrito Casserole

Simple to make, and impossible to stop eating!
1 Lb lean ground beef
2 Ontario greenhouse peppers, chopped
3 Ontario greenhouse tomatoes, chopped
1 Onion, thinly sliced
1 Package taco seasoning mix
¾ Cup water
1 Can refried beans
2 Cups shredded old cheddar cheese
12+ tortillas
Brown the beef in a skillet. Add taco seasoning mix and water. Stir and simmer for 10 minutes.
In a greased casserole dish, place a single layer of tortillas. Next, spread ½ of the refried beans, and 1/3 of the meat mixture over tortillas. Sprinkle some of the cheese.
Place another layer of tortillas on the cheese layer. Add the peppers, tomatoes and onion.
Place a layer of tortillas again. Add the remaining refried beans, meat mixture and cheese. Place the last layer of tortillas on top of the casserole.
Bake, covered, at 350 F for 40-45 minutes.
