Slow Cooker Chicken Cacciatore

The beauty of using a slow cooker is that your dinner is waiting for you when you get home from work.
3 Lbs chicken pieces
8 Oz mushrooms, sliced
1 Large onion, chopped
1 Cup Ontario greenhouse red pepper, cut in chunks
3 Cloves garlic, sliced
5 Ontario greenhouse tomatoes, chopped
1 Tsp salt
1 Tsp black pepper
1 Tsp dried thyme
Olive oil
1 Cup chicken broth
3 Cups uncooked instant rice
Brown chicken in olive oil in a skillet over medium high heat.
In a slow cooker, place the mushrooms, onions, peppers, tomatoes, garlic, thyme, salt, pepper, chicken broth and chicken. Cover and cook on Low for 6-8 hours.
When ready to serve, cook the rice per package directions. Serve the Cacciatore over the rice.
