Sausage Hash

A perfect brunch or light supper.
    
6    Potatoes, cut into small cubes
1    Ontario greenhouse red pepper, seeded and sliced thinly
1    Ontario greenhouse yellow pepper, seeded and sliced thinly
1    Small onion, chopped finely
1    Lb of sweet Italian sausage, cut from case (or your favourite sausage)
2    Tbsp vegetable oil
    
Heat oil in a large skillet over medium heat. Add sausage and potatoes. Cover and cook for 20 minutes until potatoes are tender – stir occasionally. Add red & yellow peppers and onion to skillet and cook a further 10 minutes.

If you wish to add poached eggs to this dish – do so!!!
