Tomato Crisp

Wow them with this beautiful and easy dish.
    
2                       Lbs Ontario greenhouse cherry or grape tomatoes
1                       Red onion, chopped
1                       Small zucchini, chopped
3 tbsp + ¼ cup    Olive oil
6                       Cloves garlic, chopped
½                      Cup grated parmesan cheese
1                       Box seasoned croutons
                         Salt and pepper to taste
    
Pour the croutons in a bowl and mix with ¼ cup of olive oil. Set aside.

In another bowl, mix together the tomatoes, onions, garlic and 3 tbsp of the olive oil. Season with salt and pepper.

Pour tomato mixture into a casserole dish. Top with croutons. Sprinkle with grated parmesan cheese. Bake at 325 for 30 minutes. Cover with aluminum foil and bake for another 20 minutes.
