They'll Eat Their Veggies Stew

Your family will love this stew, and you will love that they are eating their veggies!
    
1         Eggplant, cubed
1         Onion, chopped
1         Zucchini, cubed
1         Ontario greenhouse red pepper, chopped
3         Ontario greenhouse tomatoes, chopped
¼        Cup olive oil
½        Cup uncooked rice
4         Cloves garlic, crushed
3         Cups chicken broth
¼        Tsp red pepper flakes
1         Tsp dried basil
1         Tsp dried parsley
Pinch    Dried rosemary
           Salt and pepper to taste
    
Place the eggplant in a strainer and sprinkle salt over top. Set aside for 10 minutes. Rinse and pat eggplant dry.

Heat oil in a large pot over medium heat. Add eggplant and sauté until browned. Add onion and garlic and sauté for a few minutes. Add zucchini, red pepper, tomatoes, rice, chicken broth, salt, herbs and red pepper flakes. Simmer for 1 hour.
