Asparagus Stir Fry

This dish is quick to prepare and healthy to eat.

1       Garlic clove, chopped
2       Tbsp vegetable oil
4       Green onions, sliced
5-6    Mushrooms, sliced
20     Asparagus spears, sliced diagonally into 2” pieces
1       Cup bean sprouts
2       Ontario greenhouse tomatoes, cored and cut into 8
1       Tbsp soya sauce
1       Tbsp sherry
¼      Tsp ground ginger
1/8    Tsp pepper
   
In a skillet or wok, sauté garlic in oil until lightly browned. Remove garlic from oil and discard. Stir fry green onions and mushrooms for 3 minutes over high heat. Set aside. Add asparagus and stir fry for 5 minutes. Add green onions and mushrooms back to skillet or wok, and then the rest of the ingredients. Stir fry gently for 2 minutes. Serve immediately.
