Baked Salmon With Cucumber Sauce

Although baking salmon filet in this way is not new, the sauce is unique and delicious. 

1    Tbsp butter
½    Cup Ontario greenhouse cucumber, peeled, shredded & squeeze-dried
2    Tbsp chopped onion
1    Tbsp flour
¼    Tsp dried dill
½    Cup milk
4    Tsp lemon juice
¾    Lb salmon fillets

In a medium sauce pan, melt butter and then saute cucumber and onion until tender. Blend in flour and dill. Gradually stir in milk and cook over medium until mixture boils and thickens, stirring constantly. Stir in lemon juice, salt and pepper. Keep warm.

Place 2 servings of fish in the centre of 2 pieces of foil. Fold edges to seal. Place packages on a baking sheet and bake at 475 F for 10 minutes. Drain and serve with cucumber sauce.
