Braised Cucumbers

Who would have thought that Ontario greenhouse cucumbers could taste so wonderful when braised! 

3     Tbsp butter, melted
2     Ontario greenhouse cucumbers, cut into large cubes
6     Green onions, sliced into 1” lengths
1     Ontario greenhouse tomato, diced
1/4  Cup fresh coriander, chopped
1/2  Tsp salt
1/4  Tsp pepper

In a large skillet, on high heat, melt butter. Cook cucumbers and green onions for 2-3 minutes until softened. Toss quickly with tomato, cilantro, salt and pepper. Serve immediately. Makes 4 servings.
