Breakfast Burritos

Why spend money at the "drive-thru" window when you can make these at home?

8     eggs
2     Jalapeno peppers, seeded and finely chopped*
1     Tbsp butter
6     Slices processed cheddar cheese
6     Large flour tortillas
2     Ontario greenhouse tomatoes, seeded and cubed
       Hot pepper sauce, salt, pepper to taste
       Fresh cilantro leaves

Beat together eggs, hot sauce, salt and pepper. Stir in jalapeno peppers.

Melt butter in medium, non-stick fry pan over medium-high heat. Pour in egg mixture and reduce heat to medium-low. Cook and stir until large, soft, moist curds form and no visible liquid egg remains.

For each burrito, place one cheese slice on the bottom third of the tortilla. Top with the egg mixture, cubed tomato and cilantro. Roll up tortilla and tuck ends under.

Place on microwave-safe plate and microwave one at a time at HIGH for 1 minute or until hot. Serve with additional hot sauce. Makes 6 servings.

NOTE: Instead of using a microwave, place burritos on a baking sheet and bake at 350 F for 10 minutes or until hot.

*1/3 cup of chopped Ontario greenhouse peppers can be substituted for jalapeno peppers if desired.
