Cabbage Meatloaf

Meatloaf is, generally, an under-rated dish. Here's one that uses cabbage, making it a healthier choice.
2 Lbs lean ground beef2 ½ Cups cabbage, shredded
1 Small onion, chopped
1 Egg, beaten
1 ½ Cups bread crumbs, divided
½ Cup milk
4 Tsp Worcestershire sauce
1 Tsp dry mustard
½ Tsp EACH dried marjoram and salt
¼ Tsp pepper
½ Cup cheddar cheese, cubed
2 Small Ontario greenhouse tomatoes, diced
2 Tbsp melted butter
In a large bowl, mix together beef, cabbage, onion, egg, 1 cup bread crumbs, milk, Worcestershire sauce and seasonings. Mix well. Stir in cheese. Pack firmly into a 9 x 5” loaf pan.
Bake at 350 F oven for about 1 ¼ hours. Top with tomatoes. Stir together remaining bread crumbs and butter. Sprinkle over tomatoes. Bake for 15 minutes. Makes 6 servings.
