Cucumber Dip

A refreshing change from the usual dips you serve.
1 Ontario greenhouse cucumber, ½ grated and ½ sliced
1 Pkg cream cheese at room temperature
¼ Cup mayonnaise
¼ Cup chopped chives
2 Tbsp chopped fresh parsley
1 Tbsp lemon juice
½ Tsp ground coriander
¼ Tsp pepper
Dippers: Carrot sticks, radishes, mushrooms, green onions
Place grated cucumber in a large bowl. In second bowl beat cream cheese, mayonnaise, chives, parsley, lemon juice, coriander and pepper. Once mixed, add to grated cucumber. Mix. Serve with remaining vegetables. Makes 1 ¾ cups dip.
