Brunch Casserole

Quick, delicious, nutritious - kids love to help prepare this dish.
Beat together eggs and a bit of milk. Combine with chopped ham, onions, mushrooms, Ontario greenhouse peppers and seasonings.
Pour into a casserole dish and bake at 375 F until a knife inserted in the middle comes out clean.
Sprinkle with shredded cheese and bake again until cheese melts.
