Pita Pizza Pronto

Tired of hearing, "What's for dinner?" Get the family involved in making their own pizza! It's fun and easy.

1    Tbsp vegetable oil
4    Cups sliced fresh mushrooms
6    Pita bread rounds
4    Cups shredded mozzarella cheese
3    Cups Ontario greenhouse tomatoes, chopped
¼    Cup grated parmesan cheese
      Dried oregano or basil
      Crushed red pepper flakes

Heat up the oil in a nonstick skillet, over medium high heat. Sauté mushrooms until tender and liquid has evaporated. Set aside. Place pita bread on a baking sheet and sprinkle with ¾ cup mozzarella cheese. Top with mushrooms and tomatoes. Sprinkle with parmesan cheese. Add oregano and chili pepper flakes. Bake at 350 F for 15 minutes or until hot and bubbly.
