Quesadillas And Hothouse Salsa
When you are having "one of those days," why not travel south of the border?
Quesadillas
4 Medium Ontario greenhouse tomatoes, sliced
8 Tortillas
2 Cups shredded cheese, divided
Garnishes: Chopped cilantro, sliced green onions and/or hot pickled banana peppers, sliced
Cut tomato slices in half and set aside. Place one tortilla in a small non-stick skillet and sprinkle ¼ cup of the cheese on one half of the tortilla. Arrange a single layer of tomato slices on the other half. Cook over medium heat until cheese melts. Sprinkle with cilantro, onions, peppers. Fold tortilla in half and serve immediately. Repeat with remaining tortillas and serve with Hothouse Salsa.
Hothouse Salsa
1 Ontario greenhouse cucumber
1 Ontario greenhouse pepper (any colour)
4 Green onions. Thinly sliced
3 Cloves garlic, crushed
2 Tbsp olive or vegetable oil
2 Tbsp vinegar
1/4 Tsp EACH cayenne pepper and salt
Seed and chop tomatoes and pepper and place in bowl. Dice cucumber and add cucumber and onions to bowl. Stir in remaining ingredients. Let stand at room temperature for 30 minutes. Drain and serve. Makes 4 cups.
