Grilled Polenta With Vegetable Stew

Use prepared polenta for this dish and you can breeze right through it.

1     Roll of prepared polenta, cut into 1” rounds
1     Ontario Greenhouse sweet pepper, seeded and chopped
4     Ontario Greenhouse tomatoes, seeded and chopped
1     Onion, chopped
1     Eggplant, cut into cubes
1     Zucchini, cut into cubes
¼    Cup olive oil
2    Tbsp butter
4    Cloves garlic, chopped
      Salt and pepper to taste
      Pinch of red pepper flakes
   
Grill the polenta rounds for 3-5 minutes per side. Keep warm.

Sautee the rest of the ingredients until veggies are soft and starting to brown in the olive oil and butter.

Place 1-2 polenta rounds on a plate and top with the veggie stew.
