Trout Wraps
Tasty, healthy, and easy. Another way to prepare trout.
8 Ontario trout, filleted and skinned
1 Tsp EACH salt and pepper
1 Cup Ontario greenhouse cucumber, chopped
1 Cup Ontario greenhouse tomato, chopped
½ Cup bread crumbs
¼ Cup chopped onion
2 Tbsp chopped fresh dill (or 2 tsp dried dill)
4 Tsp lemon juice
Garnish: Plain yogurt, Ontario greenhouse cucumber slices
Pat trout filets dry and sprinkle with salt and pepper.
Combine cucumber, tomato, bread crumbs, onion, dill and lemon juice. Divide stuffing among 8 filets, roll up and secure with a toothpick.
Place fish in a lightly greased baking dish. Bake, uncovered, at 400 F for 25 minutes. Serve with yogurt and fresh cucumber slices. Makes 8 servings.
