Vegetarian Chili

This quick and easy recipe is packed with flavour and nutrients.

1       Tbsp vegetable oil
1       Onion, chopped
½       Lb mushrooms, sliced
1       Ontario greenhouse pepper, cut into 1” pieces
1       Clove garlic, minced
1       Zucchini, quartered lengthwise and cut into ½” slices
1       Tbsp chili powder
¼      Cup hot sauce
6-8    Ontario greenhouse tomatoes, chopped
2       Cans kidney beans, rinsed and drained
         Salt and pepper
         Shredded cheddar cheese
   
Heat oil in a large sauce pan over medium high heat. Add onion, mushrooms, greenhouse pepper, garlic and zucchini, and cook until vegetables have softened. Stir in chili powder, hot sauce, tomatoes and kidney beans. Bring to a boil, reduce heat, cover and simmer about 30 minutes. Season with salt and pepper. When serving, sprinkle shredded cheese on top.
