One Pan Roasted Dinner

Toss it together. Toss it in the oven. Done!

1    Roast (beef or pork), approx. 4 lbs.
5    Ontario greenhouse peppers, cut into large wedges
3    Onions, cut into wedges
8    Potatoes, scrubbed and cut into wedges
8    Carrots, scrubbed and cut into large pieces
3    Stalks celery, cut into large pieces
2    Tbsp olive oil
   
Rub your favourite seasonings into the meat. Place meat, uncovered, in a shallow roasting pan and surround the meat with the vegetables. Add salt and pepper to the vegetables, and drizzle olive oil over top. Roast in a 425 F oven for 45-55 minutes.

Let roast stand for approximately 10 minutes at room temperature before carving. Vegetables should be tender and lightly browned.

TIP: Lining your roasting pan with foil will cut down on the clean-up too!
